FOCACCIA DI RECCO CASALINGA



Ingredienti per 2 focacce
1 kg di farina bianca
400 ml di acqua
150 ml di olio
800 gr di crescenza

Preparazione
Per preparare l’impasto potete usare il mixer e poi continuate a lavorare l’impasto a mano.
Versate nel mixer la farina, l’olio e l’acqua e aspettate che si formi una palla. A questo punto cominciate a lavorare a mano per 10/15 minuti, fin quando l’impasto sarà diventato liscio. Dividetelo in due parti, ungetelo con dell’olio, foderatelo con della pellicola trasparente e mettete a riposare per 1 ora circa a temperatura ambiente.
Quando l’impasto sarà pronto, ungete per bene la teglia (la teglia dovrebbe essere di rame perché è un’ottimo conduttore di calore e rende la focaccia più croccante), dividete ogni porzione in due parti e stendete l’impasto fino a farne una sfoglia sottilissima e posatela sulla teglia.
A questo punto aggiustate con le mani in maniera che l’impasto aderisca bene alla teglia e metteteci dentro la crescenza. Non è facile da spalmare, quindi spezzettatela con le mani. Versate un filo d’olio e un po’ di pepe.

Stendete la parte restante dell’impasto e adagiatela sopra. Sigillate i bordi in maniera che non si formino bolle d’aria.

A questo punto strappate la sfoglia superiore in 4 punti (“camini”) per permettere all’aria di uscire. Aggiungete un filo d’olio in superficie.

Fatto questo la focaccia è pronta per essere infornata.
La focaccia di Recco originale viene cotta a 300 o C! Ma con i fori normali seguite questo procedimento: Si pre-riscalda per bene il forno. Quindi si accende il grill per 10 minuti circa per scaldare la resistenza. Poi si mette il forno al massimo della potenza per 15 minuti e si inforna quindi la focaccia sulla griglia più bassa del forno.
Trascorsi 5 minuti, accenere il grill e fate dorare la focaccia sopra.
Tirate la teglia fuori dal forno, rompete con le mani la parte superiore e aggiungete del sale.

NB Qui all'estero la Crescenza, purtroppo é quasi impossibile da trovare, quindi potete usare un altro tipo di formaggio cremoso che non abbia un sapore troppo "aggressivo". Questa volta ho usato del Brie. In fin dei conti, la Liguria confina con la Francia...

    Use the mixer to prepare the initial dough, then kep on working with your hands.
    Pour into the mixer flour, water and oil and mix until it gets like a ball. Now wotk it with your hands for aprox 10/15 min. Cut it in 2 parts, oil it and wrap it up and leave it for 1 hour out of the fridge.
    Once it's ready, oil the oven tray (it should be a copper one), cut each ball in 2 and flat them in a very thin layer. Put the layer on the tray.
    Add the cheese add a thread of oil and some pepper and cover up with another thin layer.

    Open up 4 chimneys so that the air can come out. Add some oil on top and slide it into the oven.

    Pre-heat the oven, the grill too. Bake for 10/15 minutes in the lower level of the oven. Then put it under the grill for another 5 min.
    Take it out, break the upper part with your hands and add some salt.

    NB As Crescenza is almost impossible to find abroad, you can use some other cheese. As long as it's creamy and not with an "agressive" taste.

  2. Would Queso Fresco Batido do or is this too watery?

    The other problem I have is the copper tray. I don't have one!

  3. You need something with philadelphia texture. You might as well want to try and mix a couple of cheese, ie brie and philadelphia.

    The copper tray would be idela as copper gets heated quickly, but don't worry I haven't got one either. ;-)

  4. Spreadable Queso Blanco has roughly the same texture as Philadelphia but I think it would taste much better with Brie. lol
